Symfony2 is not a replacement for Drupal itself, though it is possible to create a content management system using Symfony components. However, Drupal is so much more than just its core CMS / framework, with the Rules and Views modules alone being reason enough to continue using it even if you could feasibly roll your own solution from scratch. Hopefully the same will be true of Commerce on Drupal 8. : )
